Royal Winter Fair
PEI’s Devin Delay and Michaela Power were our two junior chefs that represented us at the Royal Winter Fair Competition. There were 8 teams that competed; representing 3 provinces, PEI, Quebec and Ontario. The Event was held at Cirillo’s Culinary Academy as a part of the Taste Canada Award 2022.
Devin & Michaela were the only team that elected to showcase their butchery skills during the event. They prepared, PEI Flat Iron Roulade stuffed with chef-foraged Island mushrooms and pancetta. Accompanied by a fall squash puree, pickled carrot salad, PEI pommes frites, island wild mushroom foam, garden sage oil, deer lichen and deer mushrooms.
Devin & Michaela were the only team that prepared their dish from start to finish at the event. Even though they didn’t place in the competition; they represented PEI very well.
Congratulations to Durham College who placed 1st at the event.
